Top 10 Cupcake recipes*
This can be made for a kids tiki party or a hawaiian luau party.
Makes 20 cupcakes/can keep for up to 2 days/freezes up to 2 months.
2 cups of white flour
1 cup self raising flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
2 450 gram cans of crushed and drained pineapple-reserve juice
2 cups brown sugar
1 cup dried cocunut
2 1/4 cups over ripe mashed bananas
4 eggs beaten
1/ 1/2 cups vegetable oil
preserved pineapple juice -should be at least half cup or more
Preheat the oven on 325 degrees or 170 C. Line two 12 hole muffin trays with 10 yellow or pink *cupcake papers*.
Sift flour, baking soda, cinnamon and ginger together in a large bowl. Add remaining ingredients and mix using a *rubbermaid spatula.* Stir until combined evenly.
Use a spoon to drop the cupcake mixture into the cupcake papers. Fill each one about three quarters full. This is a general rule of thumb for all cupcakes.
Bake 25 mins or until a fine skewer inserted in the middle comes out clean.
Immediately take the cakes out of the trays. Cool them on a wire rack for half hr before you frost them.
Use store bought frosting to frost.
Place a handful of cocunut on top of each cake. Top it with an open cocktail umbrella or a pretzel stick with a kiwi slice pushed throught the top of the pretzel to mimic an umbrella top.

Ingredients:Makes 24 cupcakes
1 18 oz package of cake mix-plus whatever ingredients you need to prepare the mix
16 oz of white cake frosting (1 container)
2 different colors of food coloring -you decide what colors you want your cakes to be
An assortment of candies and different colored sugars
Black or red licorice cut into about 4 inch long peices
1. Preheat oven to 350 F. Spray 24 standard size muffin cups with non stick spray or grease them with a little butter or oil.
2. Prepare the cake mix by the package instructions. Spoon the batter into the muffin cups filling about 3/4 full.
3. Bake 20 mins or until a toothpick inserted in center comes out clean. Cool cupcakes on wire racks for 10 mins. Remove them from the cups and cool completely on wire racks.
4.Divide the frosting into two small bowls.Use one color of food coloring per bowl. Add one drop at a time until the desired shades are reached.
5. Cut the cooled cupcakes in half vertically.Place the halfs together with the cut sides out to resemble butterfly wings. Frost each half with a different colored frosting. Decorate the tops with candies.
6.Slit the licorice down the middle about an inch down on each end and place in the center of the two half cupcakes to create an antennae. Pull the cut ends of the licorice outward to make it look like antennae.
