1. VANILLA CUPCAKE RECIPE
Yield : 12 cupcakes
1 1/2 cups of all purpose white flour (7 1/2 oz/235 grams)
2 tsps baking powder
pinch of salt
1/2 cup unsalted butter (4 oz/125 grams),at room temperature
1 cup sugar (8 oz/250 grams)
1 tsp of vanilla extract
2 large eggs at room temperature
3/4 cup whole milk (6 fl.oz/180ml),at room temperature
VANILLA FROSTING RECIPE below
Preheat oven to 350 degree (180C). Line a 12 cup muffin pan with liners.
In a bowl,using a handheld mixer or a stand mixer fitted with the paddle attachment, beat together the butter, sugar and vanilla on medium speed til creamy, about 3 mins. Add eggs, one at a time, beating well after each one. Stop the mixer and use a spatula to scrap down the sides of the bowl. Turn to low speed and beat in the flour mixture in 3 additions alternately with the milk in 2 additions, beginning and ending with the flour mixture and beating just until blended after each addition.
Pour the batter into the muffin cups you prepared, filling each cup abouth three quarters full. Bake til golden brown and a toothpick inserted in the middle comes out clean. Takes about 17-20 mins to bake. Let cool in the pan or on a wire rack 5 mins or so. Frost the cupcakes.
Makes 2 1/4 cups(18 fl oz./560 ml)
3/4 cup unsalted butter (6 oz/185 grams)at room temperature
3 1/4 cups(13 oz/410grams) Confectioners' (icing sugar)
2 tbsps of heavy double cream
2 tsps vanilla extract
1/5 tsp salt
In a bowl, using an electric mixer on low speed, beat together the butter,sugar, cream, vanilla, and salt until creamy and smooth, about 2 mins or so. Use it right away.
